Ragda Patties

Ingrediants:
For Ragda:
1 cup dehydrated white peas.
2 Tomatoes.
1/4 Tsp Cumin seed.
1/4 Tsp Muster seed.
1/4 Tsp Turmeric powder.
1/2 Tsp Red chilli powder.
1/2 Tsp Garam masala.
1 Tsp Chole masala.
Salt as per taste.

For Patties:
4 potatoes boiled, peeled, mashed.
2 cup Bread slice crumb.
4 Green chilli chopped.
1 Tsp Ginger paste.
1/4 Tsp Turmeric powder
1 Tsp Oil.
2 Tsp Lemon juice.
1/2 Tsp Cumin powder.
1/2 Tsp Chaat masala.
Salt as per taste.
Coriander leaves.

How to make Ragda Pattis:
Ragda:

1. Wash and soak White peas overnight in water.
2. Boil channa with baking soda in pressure cooker for 10 minitue or take 10 whistle.
3. Heat oil in a pan, add Muster seed, Cumin seed & Ginger paste.
4. Then turmeric powder, Red chilli powder and tomatoes.
5. Then add Garam masala & Chole masala.
6. Add little bit water so that masala won't burn.
7. Now, add the boiled peas and water if needed and mix well.
8. Cover and cook on medium heat for 5-10 minutes.

Patties:
1. Boil, peel and mash the potatoes.
2. Add all ingredients of Patties into mashed potatoes.
3. Mix and knead well into a dough.

4. Divide the dough into balls.
5. Press each ball with hand so that it would make into a round patty.
6. Heat oil in a pan and shallow fry the prepared patties in the oil till golden brown on both sides.
7. Take out the patties from the oil and put them into a bowl with tissue paper to drain the excess oil.

To serve Ragada Patties:

Prepare tamarind chutney.
Prepare Coriander chutney.
Cut onion into small pieces.Take the serving plate, put two Patties in the plate. Pour the Ragda on the Patties .
Add Tamarind & Coriander chutney.Sprinkle chopped onions, a pinch of chat masala powder, Sev and serve hot.


Tip:
It is very easy to prepare homemade bread crumbs. You just need bread slices. Then keep these slices in oven for 5 min at temperature 400C. Then Remove slices from oven and in blender bled it. Again keep that bread crumb in oven for 5 min at temperature 400C.
Keep this bread crumb in zip lock bag in frozen and use it whenever necessary.

Aloo Paratha

Ingredients:
3 Boiled potato's.
4 Green Chillies finely chopped.
6 Black Pepper powder.
1 Tsp Jeera powder
Coriander leaves finely chopped
1 Tsp Lemon juice

How to make Aloo Paratha:
1. For the cover make dough out of whole-wheat flour (atta), as you would do for any paratha/roti.
2. Boil potato's & Mash it.
3. Add all ingredients in mashed potato's and mix it properly.
4. Now take small wheat flour dough and make small poori size roti.
5. Then put some oil on it.
6. Add Potato mixture on that and Gather the edges to make a round ball. Lightly dust the surface with flour and roll out the ball into six-inch paratha.
7. Now heat pan and put paratha on it.
8. Rost both side of paratha till they turn a shade of golden.
9. Grease with ghee,oil or butter.

Serve paratha with Yogurt, Green mint chutney and mango pickle.

Drumstick Dal

Ingredients:
1 cup Channa Dal
3 Drumsticks
2 Tomatos
1 tsp Ginger
1 tsp Garlic
2 tsp Grated coconut
4 Green chili
1/4 tsp Mustard
1/4 tsp Cumin seeds
1/4 tsp Hing
Coriander leaves



How to make Drumstick Dal:
1. Cook dal in pressure cooker with water salt, turmeric powder and hing.
2. Heat 2 tsp oil in pan and add muster and cumin seed.
3. Make a paste of coconut,green chili, ginger & garlic.
4. Then add tomato pices.
5. Once tomato pices gets cooked then add drumstick pices.
6. Add 1 cup water and cover the pan.
7. Cook it for 5 minute.
8. Then add cooked dal.
9. Add coriander leaves for garnish and cook it for 5-10 min.

Dum Aloo

Ingredients for Kashmiri Dum Aloo:
6 small potato
2 tsp Red chili powder
1/2 tsp cumin seed
1 tsp sauph powder
2 tsp Yogurt
Coriander leaves
Salt
Vegetable Oil






How to make Kashmiri Dum Aloo:
1. Scrape the potatoes, prick all over with a fork and wash in water.
2. Dry the potatoes on a cloth.
3. Heat oil in pan for deep fry.
4. Deep fry the potatoes until golden brown. Drain and set aside.
5. Heat the pan and add 2 tsp oil.
6. Once oil is heated, add cumin seeds.
7. Then add red chili powder.
8. Add fried potato and add water.
9. Keep heat on medium flame and cover the pan.
10. Check after every 5 min.
11. Once Potato is cooked, add yogurt.
12. And about 5 min. later turn off the heat.
13. Garnish using Coriander leaves.
