Ingredients:
2 cup Idli Rava
1 cup Urad dal
Salt

How to make Idli:
1. Soak Urad dal in water for 2 hrs.
2. Add some water and make a paste of Urad dal.
3. Then add water in Idali Rava & wash it.
4. Then remove all water from Idli Rava & add it into Urad dal paste.
5. Add salt & some water if needed.
6. Keep this mixure for overnight in warm place.
7. After mixture ferments make idli in idli cooker.

8. Serve hot Idli with samber & chatni.

Dhokala

Ingredients:

1 cup Besan
½ cup Sour buttermilk
½ cup warm water
1 Tsp Ginger Garlic paste
1 Tsp Green chili paste
½ Tsp Lemon Juice
½ Tbsp oil
½ Tsp baking soda
Salt as per taste

For Tadka -
3 Tbsp oil
½ Tsp Sugar mixed in water
1 chopped Green Chili
½ Tsp Muster Seed
Coconut and Coriander Leaves for garnishing

How to make Dhokala:
1. Mix Besan, Buttermilk and water overnight (10-12 hrs) in a warm place.
2. After it ferments then add Ginger Garlic paste, Green Chili paste, lemon juice and 1/2 tbsp oil. Mix it well.
3. Add water to a pressure cooker and let it boil.
4. When it boils adds soda to the mixture and mix well.
5. Add this mixture in vessels (oiled) of your choice (flatter the vessel the better).
6. Keep the cooker on high flame for 10 mins (without the pressure valve)...just steam!
7. At the end of 10 mins check if the dhokla is cooked properly using a knife.
8. For Tadka, Heat 3 Tsp oil in pan, then add Muster seed & Green chili.
9. After the dhokla is cooled cut it and Add Tadka, Sugar water and garnishing it using Coconut & Coriander Leaves!
